Instructions:

  1. Marinate the Fish:
    • Place the diced fish in a non-reactive bowl.
    • Pour the fresh lime juice and lemon juice over the fish, ensuring it is fully submerged.
    • Cover the bowl and refrigerate for about 30 minutes to 1 hour, until the fish turns opaque and “cooks” in the citrus juices.
  2. Prepare the Vegetables:
    • In a separate bowl, combine the diced red onion, diced tomatoes, chopped cilantro, and jalapeño pepper.
    • Gently toss to mix the ingredients together.
  3. Combine the Fish and Vegetables:
    • Using a slotted spoon, remove the fish from the citrus marinade and transfer it to the bowl with the vegetables.
    • Discard the remaining marinade.
