Ingredients:
- 1.5 lbs (700g) pork shoulder, cut into chunks
- 2 cans (29 oz / 822g each) hominy, drained and rinsed
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 dried ancho chilies, stemmed and seeded
- 2 dried guajillo chilies, stemmed and seeded
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 bay leaf
- Salt, to taste
- Toppings: shredded cabbage, sliced radishes, chopped cilantro, diced onions, lime wedges, and dried oregano
Instructions:
- Prepare the Chilies:
- Heat a dry skillet over medium heat. Toast the dried chilies for a few seconds on each side until fragrant. Be careful not to burn them.
- Place the toasted chilies in a bowl and cover them with hot water. Let them soak for about 15 minutes until softened.
- Cook the Pork:
- In a large pot, add the pork shoulder chunks, chopped onion, minced garlic, bay leaf, dried oregano, ground cumin, and salt.
- Cover the ingredients with water and bring the pot to a boil. Skim off any foam that rises to the surface.
- Reduce the heat to low, cover the pot partially, and simmer for about 1.5 to 2 hours until the pork is tender and cooked through.
- Prepare the Sauce:
- Drain the soaked chilies, reserving the soaking liquid.
- Place the chilies in a blender or food processor. Add some of the reserved soaking liquid and blend until you have a smooth sauce.
- Add the Hominy and Sauce:
- Once the pork is cooked, add the drained hominy and the chili sauce to the pot.
