Authentic Pozole Recipe: A Flavorful and Satisfying Hominy Soup

Ingredients:

  • 1.5 lbs (700g) pork shoulder, cut into chunks
  • 2 cans (29 oz / 822g each) hominy, drained and rinsed
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 dried ancho chilies, stemmed and seeded
  • 2 dried guajillo chilies, stemmed and seeded
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 bay leaf
  • Salt, to taste
  • Toppings: shredded cabbage, sliced radishes, chopped cilantro, diced onions, lime wedges, and dried oregano

Instructions:

  1. Prepare the Chilies:
    • Heat a dry skillet over medium heat. Toast the dried chilies for a few seconds on each side until fragrant. Be careful not to burn them.
    • Place the toasted chilies in a bowl and cover them with hot water. Let them soak for about 15 minutes until softened.
  2. Cook the Pork:
    • In a large pot, add the pork shoulder chunks, chopped onion, minced garlic, bay leaf, dried oregano, ground cumin, and salt.
    • Cover the ingredients with water and bring the pot to a boil. Skim off any foam that rises to the surface.
    • Reduce the heat to low, cover the pot partially, and simmer for about 1.5 to 2 hours until the pork is tender and cooked through.
  3. Prepare the Sauce:
    • Drain the soaked chilies, reserving the soaking liquid.
    • Place the chilies in a blender or food processor. Add some of the reserved soaking liquid and blend until you have a smooth sauce.
  4. Add the Hominy and Sauce:
    • Once the pork is cooked, add the drained hominy and the chili sauce to the pot.
    • Stir well to combine all the ingredients.
    • Simmer the Pozole for an additional 30 minutes to allow the flavors to meld together.
  5. Serve:
    • Ladle the Pozole into bowls.
    • Serve with a variety of traditional toppings such as shredded cabbage, sliced radishes, chopped cilantro, diced onions, lime wedges, and a sprinkle of dried oregano.
    • Accompany with warm tortillas or tostadas on the side.
