Barbecue Rib

Ingredients:

  • 2 racks of baby back ribs or St. Louis-style ribs
  • Dry Rub:
    • 2 tablespoons brown sugar
    • 1 tablespoon paprika
    • 1 tablespoon chili powder
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon cayenne pepper (optional, for spiciness)
  • Barbecue Sauce:
    • 1 cup ketchup
    • 1/4 cup apple cider vinegar
    • 2 tablespoons brown sugar
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon Dijon mustard
    • 1 teaspoon garlic powder
    • 1/2 teaspoon smoked paprika
    • Salt and black pepper to taste

Instructions:

  1. Preheat your grill or oven to 275°F (135°C).
  2. In a small bowl, combine all the dry rub ingredients: brown sugar, paprika, chili powder, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well.
  3. Prepare the ribs by removing the membrane from the back of the racks. This will help the flavors penetrate the meat.
  4. Generously apply the dry rub on both sides of the ribs, pressing it into the meat to ensure good coverage. Let the ribs sit at room temperature for 15 minutes.
  5. Place the ribs on the grill or in the oven, bone side down. Cook for 2-3 hours, or until the meat is tender and starts to pull away from the bones. If using a grill, set it up for indirect heat by placing the ribs on the cooler side of the grill.
  6. While the ribs are cooking, prepare the barbecue sauce. In a small saucepan, combine the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, garlic powder, smoked paprika, salt, and black pepper. Simmer over low heat for about 10 minutes, stirring occasionally.
  7. During the last 30 minutes of cooking, brush the ribs generously with the barbecue sauce on both sides, allowing it to caramelize and create a sticky glaze.
  8. Once the ribs are done, remove them from the grill or oven and let them rest for a few minutes.
  9. Cut the ribs into individual servings and serve them with extra barbecue sauce on the side.
