- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to your spice preference)
- 1 teaspoon garam masala
- 1 teaspoon dried mango powder (amchur)
- 2 tablespoons vegetable oil
- Salt to taste
- Fresh cilantro (coriander leaves) for garnish
For Bhature (Fried Bread):
- 2 cups all-purpose flour (maida)
- 1/4 cup semolina (sooji)
- 1/2 cup plain yogurt
- 1 teaspoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon vegetable oil
- Water (as needed) for kneading the dough
- Vegetable oil for deep frying
Instructions:
Chole (Chickpea Curry):
- Rinse the soaked chickpeas thoroughly and cook them in a pressure cooker with enough water and a pinch of salt until they are tender. This will take around 15-20 minutes. Alternatively, you can use canned chickpeas and skip this step.
- In a large skillet or pan, heat 2 tablespoons of vegetable oil over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onions and sauté until they turn golden brown.

- After resting, divide the dough into small lemon-sized balls and roll them into smooth balls between your palms.
