Ingredients: For Dosa Batter:

  • 1 cup regular rice
  • 1/2 cup urad dal (split black gram)
  • 1/4 cup poha (flattened rice)
  • 1/4 teaspoon fenugreek seeds
  • Water (for soaking and grinding)
  • Salt to taste

For Potato Masala Filling:

  • 3 medium-sized potatoes, boiled and mashed
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon split urad dal
  • 1/2 teaspoon chana dal
  • 1-2 green chilies, finely chopped (adjust to your spice preference)
  • 1 sprig curry leaves
  • 1/2 teaspoon turmeric powder
  • A pinch of asafoetida (hing)
  • Salt to taste
  • 2 tablespoons water
  • Fresh coriander leaves for garnish

Instructions:

For Dosa Batter:

  1. Wash rice, urad dal, and fenugreek seeds separately and soak them in water for 4-6 hours.
  2. Soak poha for 30 minutes before grinding.
  3. Drain excess water from the soaked ingredients and grind them together to form a smooth batter. Add water as needed to achieve a pouring consistency.
  4. Mix in salt to taste and let the batter ferment overnight or for at least 8 hours.

For Potato Masala Filling:

  1. In a pan, heat vegetable oil over medium heat. Add mustard seeds and let them splutter.
  2. Add cumin seeds, split urad dal, and chana dal. Sauté until they turn golden brown.
  3. Stir in the chopped green chilies and curry leaves. Sauté for a minute.
  4. Add turmeric powder, asafoetida, and mashed potatoes. Mix well to combine all the ingredients.
  5. Pour water and season with salt. Cook the masala for 2-3 minutes until the flavors meld together. Garnish with fresh coriander leaves.

For Making Masala Dosa:

  1. Heat a non-stick dosa pan or griddle over medium heat. Once hot, spread a ladleful of dosa batter in a circular motion to form a thin crepe.
  2. Drizzle some oil around the dosa and cook until the edges turn crispy and golden.
  3. Spoon the potato masala filling onto one half of the dosa and fold it over to create a semi-circle shape.
  4. Press gently to seal the dosa and let it cook for another minute.
  5. Serve the hot and delicious Masala Dosa with coconut chutney and sambar for a complete South Indian feast.

Note: You can also add finely chopped onions, carrots, or paneer to the potato masala for additional flavors and textures.
