Instructions:
For the Bhaji (Vegetable Curry):
- Heat butter and oil in a large pan or kadhai over medium heat.
- Add minced garlic and grated ginger. Sauté for a minute until the raw aroma disappears.
- Add finely chopped onions and sauté until they turn translucent.
- Add finely chopped tomatoes and cook until they soften and turn mushy.
- Add finely chopped bell pepper (capsicum), carrot, boiled and mashed potatoes, cauliflower, and green peas. Mix well.
- Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix everything together.
- Cook the bhaji on low heat, mashing the vegetables with the back of a spoon or a masher, until they are well combined and the flavors meld together. If needed, you can add a little water to adjust the consistency.
- Simmer the bhaji for 10-15 minutes, allowing the flavors to develop. Adjust the salt and spices according to your taste.
- Garnish with fresh coriander leaves.
For the Pav Bread:
- Slit the pav buns horizontally, leaving one side intact.
- Heat a tawa (griddle) or a pan over medium heat. Spread butter on the tawa and place the pav buns on it.
- Toast the pav buns on both sides until they turn light golden brown and crisp.
To Serve:
- Serve the hot and buttery Pav Bhaji in a plate or a bowl.
- Garnish with a dollop of butter and fresh coriander leaves.
