Pav Bhaji

Ingredients:

For the Bhaji (Vegetable Curry):

  • 2 medium-sized potatoes, boiled and mashed
  • 1 cup cauliflower florets, boiled and mashed
  • 1/2 cup green peas, boiled and mashed
  • 1 large onion, finely chopped
  • 2 medium-sized tomatoes, finely chopped
  • 1 small green bell pepper (capsicum), finely chopped
  • 1 small carrot, finely chopped
  • 4-5 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons butter
  • 2 tablespoons oil
  • 2 teaspoons pav bhaji masala
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

For the Pav Bread:

  • 8 pav buns
  • Butter for toasting

Instructions:

For the Bhaji (Vegetable Curry):

  1. Heat butter and oil in a large pan or kadhai over medium heat.
  2. Add minced garlic and grated ginger. Sauté for a minute until the raw aroma disappears.
  3. Add finely chopped onions and sauté until they turn translucent.
  4. Add finely chopped tomatoes and cook until they soften and turn mushy.
  5. Add finely chopped bell pepper (capsicum), carrot, boiled and mashed potatoes, cauliflower, and green peas. Mix well.
  6. Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix everything together.
  7. Cook the bhaji on low heat, mashing the vegetables with the back of a spoon or a masher, until they are well combined and the flavors meld together. If needed, you can add a little water to adjust the consistency.
  8. Simmer the bhaji for 10-15 minutes, allowing the flavors to develop. Adjust the salt and spices according to your taste.
  9. Garnish with fresh coriander leaves.

For the Pav Bread:

  1. Slit the pav buns horizontally, leaving one side intact.
  2. Heat a tawa (griddle) or a pan over medium heat. Spread butter on the tawa and place the pav buns on it.
  3. Toast the pav buns on both sides until they turn light golden brown and crisp.

To Serve:

  1. Serve the hot and buttery Pav Bhaji in a plate or a bowl.
  2. Garnish with a dollop of butter and fresh coriander leaves.
  3. Serve with toasted pav buns, lemon wedges, and additional chopped onions on the side.
  4. Squeeze some lemon juice over the bhaji for an extra tangy flavor, if desired.
